
Today's WFMW post is the backward theme - which means, I ask you what works for you, instead of telling you what works for me.
My question is for all those bread bakers out there...I recently made 100% whole wheat bread using this recipe, which has pretty decent reviews.
It rose well and looks great but has a horribly bitter aftertaste and is inedible.
Why does my whole wheat bread taste bitter?

Thanks for visiting my blog. I wish I could help with your bread. My first thought is too much baking soda? Maybe an ingredient was a little off? I'm thinking of getting a bread machine. Did you make your bread with a machine and if so, which one do you have and do you like it? :)
Thanks for the suggestions on my blog! I've elminated as much stress from my life as possible, but what I've found is that when you get terribly stressed, it takes its toll on your body and can take months to recover. In the meantime, I have to avoid all my trigger foods and eat as healthy as possible. My neuromuscular disorder complicates things.

Hi Kim and thanks for your suggestions about water - I've never liked Crystal Light either, but Green Tea I could do...
I've made lots of bread, but gave up on whole wheat as mine always turns out too dense and heavy.
I am not sure why that would happen. I haven't had that problem! Maybe you should just try it again and see. Are your ingredients all fresh? That is the only thing I can think of!

If you used a machine or mixer (KitchenAid, etc.) it probably came in contact with the mechanical grease. When I don't watch my dough and it creeps up the hook, it can come in contact with the black greasy stuff and the loaf tastes TERRIBLE.
Also, make sure your flour hasn't gone rancid! Whole grains go rancid more quickly than white flour.

Thanks everyone...I am thinking my whole wheat flour has gone bad...don't recall when I bought it, so it has prob been awhile.
It's not machine grease, I made dough for cinnamon buns in the same bread machine with no prob - but used white flour.
I'll buy a new bag of WW flour and try again.
Ha! I came over to see if I could give you a tip, since you were kind enough to visit my WFMW post. But I have NO IDEA about baking bread! All I can say is that I'm impressed you baked bread in the first place! :)
Hmmm ... every wheat bread recipe I've made has used some white flour in addition to the wheat - usually pretty close to half and half. Also, my recipe uses oil rather than margarine ... those would be the only thing I can think of.
